The first drive after a PCM update (twice so far), I've always had it do that. Not sure what the reasoning is, but it doesn't want to be a full hybrid until it has a drive in, then powers down and everything resets and then truck starts up again.
If you're seeing the greyed out update option, you need to follow the TSB to fix it. I don't think there's any other way to reliably get out of that, as you saw yourself. It may come out of that setup briefly, but it will go back eventually.

For the APIM Sync issue, try to force restart the module with Forscan/FDRS and see if it fixes it. I know with any Forscan change I've made, it needs to be reset to see it, or you have to let the truck sit to fully power down first.

The TSB for the update was published late last week, Thursday night or early Friday, not yesterday. Not necessarily old news, but certainly not new either.
If the AC inverter was bonded to chassis ground and there was a fault that sent AC current/voltage to the DC system, that would probably be bad. To me, it would make sense to have it isolated. Especially in the event of an accident so first responders don't get electrocuted.
