Anytime you go from one major revision to another one, you really need to remove the existing user data to keep the new version from coughing up hairballs using your previous session data etc.
That might have been what caused the problem, but there's no way to tell really. What I can suggest...
But does it throw DTCs? I thought somebody said that the Mach-E version threw DTCs all the time. That's why I went with the Bronco Sport version (same as Escape).
I would NOT go with any version that came on a Mach-E. That's the one that seems to cause issues. From what I've read and experienced, you want the version that came on a '21/'22 Bronco Sport, or Escape, (and possibly the Maverick? I think somebody reported using one of those). Newer versions...
New FDRS update this morning which is a major revision from '44' to '45' so make sure you tick the box to delete your user info during the install to avoid formatting errors or other issues when running the new version. Here's the download link.

All those previous repairs you listed were FSAs (except for the rear coolant pump). That's normal maintenance (FSAs) and recalls (like the lightbar). Nothing suspicious about any of that. I'm really sorry about finding yourself away from home with a new-to-you truck that's experiencing issues...
Judging by the number that have sold on Ebay in just the last 24hrs (5 at current count) there must be a shed-load of people doing this mod on their Lightnings......

The servicing dealer checked it over....did they connect the truck up to the FDRS computer (laptop) and run the FHCP test? There is also a routine there to 'initialize' the front latch mechanism. If they did all of that and still needed parts then fine...but there's a lot that can be done using...
