@Ford Motor Company never got back to me so I've scheduled a service this Wednesday.
I also finally had time to hookup forscan and read the DTCs. It's throwing 2 for TCU. They certainly seem related to my issue.

Update on mine. Still not working. Called @Ford Motor Company via the link in the app. Like I suspected the issue is apparently the modem in my truck. They said there is a known issue with 23/24 models where the modem would periodically not check in for 24 hours or so but that there was an OTA...
I'm using an iPhone (no way to clear cache) but with the data not updating on ford.com either I don't think it's an app issue. I have not driven the truck since doing anything listed above so it's possible it will update when I do.
Also, to add to the coincidence that may tie it to sync...
No dice on the app re-install which makes sense as milage and SOC aren't updating on ford.com either. The health check does show "Last health check update: 09:41 AM on 7/7/2025." But i'm guessing that's just the last time the page was loaded and not actually that it connected to the truck.
I haven't been able to connect since yesterday. I tried turning off and on connected services, disconnecting the battery and charging to 100% last night. No change. May be unrelated but I was on a drive yesterday and sync completely restarted while driving around the same time app stopped...

I wouldn't have noticed except I went to use a tesla super charger (and needed to get REALLY close) and there was no beeping and i had to turn the camera on manually. Came here and found this thread.
I thought I'd share my chat with ford regarding this.
First of all, the Ford field engineer clearly doesn't know as much as their chat AI.
They say that only the dealer can file a misbuilt claim, and they can only do it within 90 days of the truck being delivered to THEM
