There have been several “mode” updates since these videos, including the locking diffs, baja, and an off road creep. I’m sure there are better off roaders, but for EVs it is CT or R1T. A used $50k R1T looks pretty good.
Also, Lightning has off road and locking diff as well. You lift it and put mud tires on it, I think it would do great.

Then you get 180mi of highway range. The CT is doing over 300mi on highway on 35s because it has so much range in it’s height.

You forgot to add that Tesla doesn’t allow you to run any higher on the highway than what they have decided.
