In terms of ping ponging: If yours didn't ping pong before the accident and now does, I'd blame the accident. They may need to re-calibrate the camera or re-calibrate the steering.
When you say "they may need to recalibrate the camera" or steering, who is the they that I should count on here? I don't really think that the body shop will have a clue how to do this, so should I ask the Ford dealer? I just don't want to have to pay for service in this situation if this really was the result of the accident or the work the body shop did. I know the work from the body shop is warrantied and I can still push it back through insurance, but I don't know if I should expect that the body shop will really know what they are doing when it comes to these electronics.

YMMV there…. Some body shops do know how to try recalibrating the camera like they do for windshield and side mirror replacements for example. But you’re definitely right in that most of the times body shops are less knowledgeable than Ford dealerships for these kinds of software and sensor issues.

Ultimately it comes down to the insurance company to make your vehicle repaired of any damage attributed to the collision. They might make it difficult but if you need to take it to a Ford dealership to diagnose your lane keeping issues I still expect insurance to pay for it.
