If you are that close to a vehicle where this makes a difference then you are way too close!
Regardless of how close the other vehicle in front of you is - the expectation is that once the truck is perceived to be "stopped" by me, the driver, and I let up on the brake, and the vehicle rolls forward UNEXPECTEDLY, there's no knowing how far it will go - yeah, it's "only" 3 inches, but you don't know that at the time, and that create a lack of confidence - auto-hold is supposed to HOLD, not roll.

Weird behavior, but normal. My truck does it too. No idea if it's new; I rarely use the brake pedal all the way to a stop.
Yeah, me too, but my new daily route takes me through some more congested areas with stop and go traffic with people who should not be allowed to drive (maybe that's me :) ).

Maybe I should just forget the on pedal and auto hold features and pretend I'm driving an automatic ICE - that way I'll be programmed to always cover the brake and not worry about "unintended acceleration".

Just turn off auto hold.
